  • ½ cup (45 g) unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder (optional)
  • ½ cup (113 g) unsalted butter, softened
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups (190 g) all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 23 teaspoons freeze-dried raspberry powder or pink food coloring
  • ½ cup (120 ml) heavy cream
  • ¾ cup (130 g) dark or white chocolate chips, finely chopped
  • 1 tablespoon (14 g) butter (optional, for shine and richness)

Instructions

  1. Prepare chocolate dough: Cream together butter, granulated sugar, and brown sugar. Beat in egg and vanilla, then mix in dry ingredients until combined.
  2. Prepare pink dough: Repeat the creaming process and add flour, baking soda, salt, and raspberry powder or food coloring until evenly tinted.
  3. Chill both doughs for 30 minutes.
  4. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  5. Scoop rounded tablespoon-sized balls and press a shallow well into each ball.
  6. Bake for 10–12 minutes, re-pressing centers if necessary. Cool completely on a wire rack.
  7. For ganache, heat heavy cream and pour over chopped chocolate. Let sit, then stir until smooth. Add optional butter for richness.
  8. Spoon ganache into cookie wells and decorate if desired. Let set at room temperature or chill briefly.

Notes

Chill doughs well to prevent spreading; ganache can be kept firm by adjusting chocolate-to-cream ratio.
