- 3 ripe bananas, mashed (about 1 to 1 1/2 cups)
- 1/3 cup (76 g) melted unsalted butter
- 1 teaspoon baking soda
- Pinch of salt (about 1/4 teaspoon)
- 3/4 cup (150 g) granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 1/2 cups (190 g) all-purpose flour
- Optional: 1/2 cup chopped walnuts or 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment for easy removal.
- Mash the bananas in a large bowl until mostly smooth with a few small lumps.
- Stir the melted butter into the mashed bananas.
- Mix in the baking soda, pinch of salt, and sugar until combined.
- Add the beaten egg and vanilla extract; stir until blended.
- Sprinkle in the baking powder and flour, and fold gently with a spatula just until incorporated.
- If using, fold in the chopped walnuts or chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan on a wire rack for 10–15 minutes, then lift out using the parchment and cool completely before slicing.
Notes
Consider using very ripe bananas for the best sweetness. Adjust sugar levels based on personal preference, and avoid overmixing to keep the loaf tender.
