Delicious and wholesome brownies made with black beans, offering a fudgy texture and rich chocolate flavor while sneaking in fiber and protein.

- 1 can (15 oz) black beans, rinsed and drained (about 1.5 cups cooked)
- 2 large eggs
- 1/4 cup (about 25 g) unsweetened cocoa powder
- 1/4 cup (4 tbsp / ~85 g) honey or maple syrup
- 1/4 cup (4 tbsp / ~64 g) peanut butter or almond butter
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
- In a food processor, combine the black beans, eggs, cocoa powder, honey or maple syrup, peanut butter, vanilla extract, baking powder, and salt. Blend until completely smooth.
- Stir in the chocolate chips if using and fold them into the batter.
- Pour the brownie batter into the prepared dish and spread evenly.
- Bake for 20–25 minutes. Check doneness with a toothpick; it should come out mostly clean.
- Let cool completely in the pan before cutting into squares.
Notes
For a vegan version, replace eggs with flax eggs. These brownies can also be made nut-free by swapping peanut butter with sunflower seed butter.
