Description

A comforting dish of roasted chicken thighs with a sweet and tangy honey-mustard glaze, perfect for weeknights or gatherings.


Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil or parchment and set a wire rack on top.
  2. Pat the chicken thighs dry with paper towels.
  3. In a bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, onion powder, salt, and black pepper until smooth.
  4. Place the thighs skin-side up on the prepared rack or baking sheet. Brush two-thirds of the glaze over the top of each thigh.
  5. Roast the thighs for 25–30 minutes. Brush with reserved glaze after 20 minutes.
  6. Check doneness with a thermometer; target is 165°F (74°C).
  7. If needed, broil for 1–2 minutes to brown skin.
  8. Rest for 5 minutes before serving, garnished with parsley if desired.

Notes
