- 1/2 pound ground beef
- 4 cloves garlic, minced
- 2 tablespoons soy sauce (for beef)
- 1/2 teaspoon chili flakes (adjust to taste)
- 1 teaspoon sesame oil
- 1 teaspoon brown sugar
- 1 cup broccoli florets
- 1/2 red bell pepper, sliced
- 1/2 zucchini, sliced
- 1/2 cup mushrooms, sliced
- 1 tablespoon olive oil
- 1 teaspoon soy sauce (for vegetables)
- 1 cup steamed white rice (cooked, hot)
Instructions
- Heat a skillet over medium-high heat. Add sesame oil and 2 cloves garlic for the beef; sauté for about 30 seconds.
- Add ground beef, breaking it up with a spatula. Cook until browned, about 5–7 minutes. Drain excess fat if desired.
- Stir in soy sauce, chili flakes, and brown sugar. Simmer for 3–4 minutes until thickened.
- In a separate pan, heat olive oil. Add 2 cloves garlic and sauté for 30 seconds.
- Add mushrooms and cook for 2 minutes.
- Add broccoli, zucchini, and bell pepper. Stir-fry for 4–5 minutes until tender-crisp.
- Toss vegetables with soy sauce and remove from heat.
- To serve, place rice in bowls, top with beef and vegetables, and spoon extra pan juices over top. Garnish as desired.
Notes
Use low-sodium soy sauce to reduce sodium. Ground turkey or plant-based options can substitute beef.
